Brinjal Moju Recipe

Brinjal Moju is something I make often and one of my favorite dishes. To make this yummy dish you will need,

  • Egg plants (About 400g)
  • Red onions 
  • Green chillies
  • Garlic and ginger paste (2 tbsp)
  • Curry leaves
  • 3 cloves
  • Salt to taste
  • 4 tsp sugar
  • Turmeric powder
  • 3tbsp vinegar
  • 1 tsp mustard
Directions..

  • First wash eggplants well and cut into thin stripes and add salt and turmeric powder and keep it for a while for seasoning.
  • Then deep fry it until it turns into a golden brown colour.
  • Fry red onions and green chilies without cutting them into pieces.
  • Grind mustard, garlic, ginger, curry leaves and vinegar together to make a paste.
  • Heat a pan and add some oil and add the paste and add sugar and cloves.
  • Mix it with fried egg plants, onion and green chillies and add salt.
* You can add dried sprats if you prefer it as an extra ingredient. Since I'm a vegetarian I do not use them.
