Brinjal Moju is something I make often and one of my favorite dishes. To make this yummy dish you will need,
- Egg plants (About 400g)
- Red onions
- Green chillies
- Garlic and ginger paste (2 tbsp)
- Curry leaves
- 3 cloves
- Salt to taste
- 4 tsp sugar
- Turmeric powder
- 3tbsp vinegar
- 1 tsp mustard
Directions..
- First wash eggplants well and cut into thin stripes and add salt and turmeric powder and keep it for a while for seasoning.
- Then deep fry it until it turns into a golden brown colour.
- Fry red onions and green chilies without cutting them into pieces.
- Grind mustard, garlic, ginger, curry leaves and vinegar together to make a paste.
- Heat a pan and add some oil and add the paste and add sugar and cloves.
- Mix it with fried egg plants, onion and green chillies and add salt.
* You can add dried sprats if you prefer it as an extra ingredient. Since I'm a vegetarian I do not use them.
