So,I'm going to introduce you another Sri Lankan food and one of my mothers favourites.She loves coconut cakes.Pol cake or Bibikkan are some other names for this delicious coconut cakes and here is the recipe.Have fun!!!
What you'll need..
Freshly grated coconut (one coconut)egg white of 2 eggs
few drops of rose water
225g of toasted rice powder
450g of sugar
5 egg yolks
100gs of cashew
cardamoms
How to make...
- Grind 80gs of cashew with rose water and shop the other 20g
- Mix the egg yolks an sugar well and add rice powder gradually
- Add the other ingredients(except egg whites) and cashew into that mixture
- Now mix it well and bake it in an oven at 140C for 40-45 minutes.(You can use a normal container you use to bake cake or any container you like..
